Meatball Puffs

Meatball Ingredients
1 lb ground beef
1 egg
1/2 cup Italian Seasoned bread crumbs
2 Mozzarella string cheese sticks cut into 16 pieces
red pepper flakes
garlic powder
Italian seasoning

Directions to Cook Meatballs
1. Mix ground beef, egg, and bread crumbs in medium sized bowl.
2. Add red pepper, garlic powder and Italian Seasoning. (I don't measure, just add and mix until it looks right.)
3. Roll meat mixture into balls.
4. Press 1 Mozzarella piece into the center of each ball and form meat back into a ball.
5. Cook meatballs in a cast iron skillet until brown on all sides (about 8-10 minutes).

Pizza Dough Puff Ingredients
cooked meatball
shredded Mozzarella cheese
thin crust pizza dough
olive oil
garlic powder
Italian seasoning
Parmesan cheese

Directions to Cook Meatball Puffs
1. Preheat oven 350 degrees
2. Roll out dough and cut into 16 square pieces
3. Sprinkle mozzarella cheese on pieces
4. Add one cooked meatball on each square
5. Pinch corners and sides together to form balls
6. Place seam side down in cast iron skillet (you may need 2 skillets depending on how big your skillet is. I use 2 12" cast iron skillets.)
7. Cover tops with olive oil, garlic powder, and Italian seasoning
8. Bake for 15 minutes
9. Sprinkle Parmesan cheese on tops
10. Bake another 5 minutes or until done
11. Serve with a side of pizza sauce for dipping

Makes 16 Meatball Puffs with about 5-6 leftover meatballs.
